Everytime — EVERY time — I serve somebody one, they almost visibly swoon when they bite into it.

Now, on the topic of the Pit.

I wrung my hands for weeks over needing a pitter (and not wanting to buy one), and finally, just said &quot;fuhgeddaboutit&quot; and didn&#039;t pit them. And I&#039;m totally ok with that.

I don&#039;t deny that there comes a knee-jerk &quot;look out! there&#039;s pits!&quot; reaction, but I think there&#039;s also an advantage to the pits: If they weren&#039;t there, I think a jar would pretty much evaporate if left within reach of those who have had them. Sort of like how Pistachios last somewhat longer in the bowl if they&#039;re not shelled.

		<description>The maraska from croatia are not the real maraschino. The Luxardo is the real deal. The croatian stuff is from the estates stolen from the Luxardo family(half the family were murdered in the process) during world war two. They also make real maraska cherries for cocktails. Beautiful stuff. check them out if you find some.</description>
