Strained honey, as I understand it, is basically taking unprocessed honey and running it through a mesh. A very coarse filtering process. I scrapped the first couple I did and finally got it somewhat presentable. As for the rum I use two as my go-to rums, Angostura 1919 and Appleton V/X. Angostura if I want the vanilla/honey pairing to be emphasized and APpleton if I want more funky pot-stilled bite to it. Either are great, it's just a mood thing.
